分享年糕的化学问题: 热度 69 兰凯 2014-2-6 04:10; 前两天在网上看中央台的纪录片《八方小吃走遍中国》的第七集，宁波小吃。节目介绍了宁波年糕的制作过程，在讲其中米粉的舂捣程序的时候，说在这个过程中米粉的大分子结构变小， blablabla。一旁的领导问我，这个过程真的可以改变分子结构吗？领导有一个食品化学的硕士学位。我对这个说法也早有疑问。记得去年看央视的记录片《舌尖上的中国》的时候，在第二集介绍宁波年糕的时候，也说到这个过程可以使稻米的分子得到重组。对于俺们家食品化学专家的疑问，我这个曾经做过高分子化学博士后的伪专家挠了挠头，说：“那个一锤子下去那么大的动能，总是能够弄断几个化学键的吧。” 中央台的这两个纪录片这么一宣传，感觉现在这个年糕制作过程中的分子变化似乎成了一个通行的说法了。这里请教一下各位方家，这个靠舂捣就使米粉里的分子重组或者大分子变小的理论是真的吗？; 480 次阅读|55 个评论

分享那些年做化学实验的伤: 热度 55 兰凯 2013-5-5 10:18; 看了老七的帖子，心惊肉跳，又上了一堂生动的安全课。我也是做化学的，这里也盘点下这些年在化学上受的伤。高一的时候，因为我和一个同学对化学开始有了些特殊的兴趣，在化学老师的引导下，我们就走上了一条化学的不归路。在化学老师的帮助下，我们在各自家里建了个化学实验室，搞了很多药品。有的是从城里的五金店里买的。那时候可以在店里头买到硫磺，硝酸钾，氯酸钾，高锰酸钾等药品。这些都可以用来做爆炸物，要搁现在的米国，这些都是违禁物品了。我也到火车站的货场去捡过包装破损而撒出来的化肥。最多的药品是老师帮忙从中学化学实验室买的，强酸，强碱，以及各种无机盐，反正中学化学能学到的东西都差不多整到了。现在想想，那时候的老师也不怕出点事儿的。药品搞到了，于是就瓶瓶罐罐的在家里就做开了实验。那时候安全的东西懂得不多，想想后来上了研究生的时候实验室里的安全制度都不健全，高中生就更不用提了。现在回想起那时的实验和条件都觉得后怕。那时候知道浓酸浓碱厉害，于是就想试试，检验一下书本上的知识，于是氢氧化钠和浓溶液摸了，在手上滑腻腻的，没觉得有多厉害。 98% 的浓硫酸也滴在手上试验了，摸着也是滑滑的，慢慢地觉得开始发热，皮肤颜色开始变深，赶快擦干，用自来水冲掉。除了那块皮肤颜色深点，似乎也没有什么严重后果。（读了老七的文章当时就觉得后背发凉了）我和同学还交流了这些实验的体会来着，他好像也得到了同样的结果。有一回从学校搞了一瓶浓硝酸，用手拿着回家。没想到瓶盖不密封，走着走着浓硝酸就从盖子缝里漏了出来，我一直到觉得手上剧痛了才发现。后果是手心手背的皮都被烧伤，先是变黄，然后脱了一层皮。手掌心靠上的部分因为是接触最多，被腐蚀得最厉害，有两块烧得很深，后来虽然皮肤长上了，但是底下是两块死肉，始终没有和周围的组织长到一起，在手上留下了永久的伤。于是后来我对浓硝酸一直就很小心。我们没有从实验室搞到浓盐酸，于是就自己做。很简单的反应，浓硫酸和氯化钠反应，都到氯化氢的气体，用水吸收就得到盐酸了。也许是浓度不够高，所以似乎滴在手上也没有特别的感觉，不过滴到水泥地上可是冒一片白泡。那会儿我的胃消化不好，就琢磨着自己治。我想胃的消化不好不就是缺胃液吗，胃液里有稀盐酸，那我自己加些稀盐酸不久可以治了吗？于是在一次胃不舒服的时候我就直接稀释了一点盐酸，一仰脖子喝了一毫升。那味道是真酸。效果呢，那一次感觉没多久胃就不难受了。有一次在家用红磷做实验，一块燃烧的红磷掉到了桌子上。我想都没想就用手去按来灭火。那时候不知道有白磷弹一说，否则俺是绝对不会这样做的。磷燃烧的温度非常高，比烟头什么的高多了。那次手上给烧得很深，很疼。也没有包扎处理居然就挺过来了。待续。。。。。。; 177 次阅读|30 个评论

分享化学为什么没有产生在中国？: 热度 1 gordon 2013-1-23 15:08; 众所周知，近代化学从中国吸取了丰富的营养，但是为什么化学没有产生在中国呢？这跟中国人的思想有关，中国是神秘主义，暗合天象。金木水火土，一般我们指的是四季或者方位（东南西北），希腊它是探讨世界的本源，不一样。我们不论是河图洛书、阴阳五行，都蕴含一个思想，就是暗合天象。希腊人不是这么考虑的，泰勒斯考虑过这些问题。亚里士多德的 De Anima（《论灵魂》）是他们的思考中惟一保留下来的记录：“从与他（泰勒斯）有关的一些奇闻秩事来判断，他认为灵魂是运动的因由，如果这是真实的，则他就是在确认，磁石也是有灵魂的，因为它也引起了铁的运动。 ”虽然只有只言片语，可它说明，泰勒斯认为灵魂或者思维是人类行为的来源，它的运动方式是其内在的自然力量使然，这个观点与早期希腊人认为人类行为是超自然的力量引导所致的观点有很大的不同。希腊的四元素说是由 “探讨世界的本源” 这一问题引出的。在西方国家，“无神论”一般都指“一种认为根本没有超自然力量存在的理论”，而在中国大陆，一般的无神论者其实只是不可知论者。; 216 次阅读|0 个评论

分享 ZT--华盛顿大学化学midterm：地狱是放热的还是吸热的？: 热度 15 即晴 2011-11-9 13:28; 请耐着性子读完: The following is an actual question given on a University of Washington chemistry mid-term exam. The answer by one student was so "profound" that the professor shared it with colleagues, via the Internet, which is, of course, why we now have the pleasure of enjoying it as well... Here is the "Bonus Question" on the exam: "Is Hell exothermic (gives off heat) or endothermic (absorbs heat)?" Most of the students wrote proofs of their beliefs using Boyle's Law (gas cools when it expands and heats when it is compressed) or some variant. One student, however, wrote the following: First, we need to know how the mass of Hell is changing in time. So we need to know the rate at which souls are moving into Hell and the rate at which they are leaving. I think that we can safely assume that once a soul gets to Hell, it will not leave. Therefore, no souls are leaving. As for how many souls are entering Hell, let's look at the different Religions that exist in the world today. Most of these religions state that if you are not a member of their religion, you will go to Hell. Since there is more than one of these religions and since people do not belong to more than one religion, we can project that all souls go to Hell. With birth and death rates as they are, we can expect the number of souls in Hell to increase exponentially. Now, we look at the rate of change of the volume in Hell because Boyle's Law states that in order for the temperature and pressure in Hell to stay the same, the volume of Hell has to expand proportionately as souls are added. This gives two possibilities: 1. If Hell is expanding at a slower rate than the rate at which souls enter Hell, then the temperature and pressure in Hell will increase until all Hell breaks loose. 2. If Hell is expanding at a rate faster than the increase of souls in Hell, then the temperature and pressure will drop until Hell freezes over. So which is it? If we accept the postulate given to me by Teresa (a girlfriend of mine during my Freshman year) that, "it will be a cold day in Hell before I sleep with you", and take into account the fact that I slept with her last night, then number 2 must be true, and thus I am sure that Hell is exothermic and has already frozen over. The corollary of this theory is that since Hell has frozen over, it follows that it is not accepting any more souls and is therefore, extinct...leaving only Heaven, thereby proving the existence of a divine being which explains why, last night, Teresa kept shouting "Oh my God."
